Okay, okay, so Mac & Cheese is pretty easy, but I feel like if it comes in a box, it's not really a recipe. This is a from-scratch recipe that is so easy and so delicious. These blueberry bars are like a blueberry banket coffeecake (without the crumble, although I really want to try this recipe with a crumble on top).
Gather:
1 stick butter
2 cups sugar
4 eggs
1 tsp almond extract
1-3/4 cups flour
2 cups blueberries
Grease a 9x13 pan and preheat the oven to 325 degrees. Throw everything except the blueberries in a bowl and mix well. Gently stir in the blueberries and then pour into the pan. Spread to even out. Bake for 50 minutes to an hour, until a toothpick comes out clean.
Frost with:
1/2 cup powdered sugar
1 tsp vanilla
1-1/2 Tbsp butter (melted)
These were the frosting directions that came with the recipe, but anyone can make a powdered sugar frosting better. I added milk and more powdered sugar to this until it was more of a glaze.
These are the most delicious blueberry bars I have ever eaten.
Oh! - And as always, either fresh or frozen blueberries work great.
