Cranberry Upside-Down Cake


I tried a new recipe for Thanksgiving this year.  I found it in the newspaper several months ago and thought it would be perfect for fall or winter.



This is the image from Dash Recipes; mine didn't look exactly like this.  It is absolutely amazing.  Mine didn't exactly come nicely out of the pan, so it was more of a crumble than a cake, but it tasted great!  My sister helped me make it and that was great, because it's not really a simple mix-pour-bake recipe.  She chopped walnuts and melted butter while I rinsed cranberries and zested an orange.  She juiced oranges while I measured brown sugar and cinnamon.  She stirred one thing while I stirred another.  There's definitely some prep to this recipe, but it is so worth it!  And as much as I am not a fan of walnuts (or any nut in general) they added a nice crunch to this cake.  The fresh-squeezed orange juice and fresh orange zest added a great citrus kick that you just can't get from the carton or bottle. 

We'll be making this again for Christmas!
